 225 g all-purpose flour
 1 tsp baking powder
 1 tsp mixed spice
 ½ tsp ground cinnamon
 3 apple (about 500gm)
 2 large eggs
 70 g butter (melted)
 175 g light brown soft sugar
 1 large orange (grated zest)
 1 tsp mixed peel (chopped)
 1 tbsp milk
 Little icing sugar

The thing you need to do is to preheat the oven to 180C. Greased the 20cm round baking cake tins and lined the base and bottom with the baking parchment. Dust the flours and remove the excess by shaking the tins.

Take a medium-size bowl and add the all-purpose flour, baking powder and mixed spices.

Next step is to chop the apples into small dices and place them in another bowl. Toss it with one tablespoon of the sieved flour mixture. Add eggs, melted butter and sugar to the flour mixture and whisk it well for 1 to 2 minutes until all the ingredients get combined or you get a smooth, creamy consistency. After this, fold the mixture in grated orange zest, mixed peel and chopped apples (already chopped into pieces). If in case, the mixture seems dry, then you can also add a tablespoon of milk to make it wet. Pour the cake mix into the cake tins (already prepared in step 1), level it off and your cake mix is ready to bake.

Bake the cake for about one hour or until the toothpick inserted in it comes out clean. You can also test by pressing the cake in the centre if it springs then your cake is ready to serve. Don’t remove it from the wire racks. Let it cool completely for at least 20 minutes.

Remove the cake from the tins and get it ready for plating. You can give the cake a highly appealing look by dusting the icing sugar on it.
